Thai style peanut sauce

2 cups peanut butter
4 cups water
1/2 cup brown sugar
1/2 cup soya sauce
1/2 cup lemon juice
4 tsp crushed chillis
2 tsp garlic powder

Crab Cakes

1lb shelled shredded crab
1/2 cup flour
3/4 cup butter
1 tsp worchestershire sauce
1 tsp mustard powder or 1 tsp prepared/dijon mustard
1.5 tsp tabasco
10 green onion finely chopped
1 egg
1 tbsp honey
3 cloved garlic, minced

Tequila Salsa

3 medium white onions, brunoise
3 medium red onions, brunoise
3 medium red peppers, brunoise
3 medium green peppers, brunoise
4 large tomatoes, brunoise
1 large jalapeno, brunoise
1 cup granulated sugar
2 tbsp cayenne powder
3tbsp crushed chillis
6oz (or more!) gold tequila
Mix all ingredients together, allow to marinate for at least 12+ hours before serving.

Tomato Bruschetta

24 roma tomatoes
1 medium red onion, brunoise
3oz balsamic vinegar
1oz red wine vinegar
4oz extra virgin oilve oil
8 cloves garlic, slivered
20 big basil leaves, chiffonade
Cut romas in half, remove seeds with a teaspoon. Discard. Brunoise the flesh of the tomatoes. Mix everything together, let sit for at least 12 hours before service.

Bourbon Chicken

4oz soya sauce
4oz bourbon
4-8 cloves garlic (minced)
2 medium pieces ginger (minced)
6oz olive oil
1/4c brown sugar
1 tbsp crushed chilis

Phad Thai Sauce
100oz ketchup
16oz lee kum kee brand Oyster Sauce
8oz Sambal Olek chili garlic
Mix well.
Phad thai preperation
1oz canola or oilve oil
1 tbsp granulated sugar
1 tbsp crushed unsalted peanuts
4oz diced extra firm tofu
4oz cooked baby shrimp and or 4oz thinly slivered raw chicken breast
2 cloves minced garlic
1 tbsp brunoise red onion
